Lemon Cupcakes


On my birthday, a friend of mine named Kayla gave me a box of lemon, golden Oreos. I figured she could use some lemony goodness on her birthday too

Lemon Cupcakes

1 box lemon cake mix
3/4 cup sour cream
1/3 cup milk or buttermilk
3 eggs
Juice of 2 lemons (about 1/3 cup)
1/2 cup canola or vegetable oil
1 tsp vanilla extract

Cream Cheese Frosting
4 oz softened cream cheese
1/2 cup softened butter
2 tsp vanilla extract
2-3 cups powdered

Preheat over to 350 F
1. Mix all cake ingredients with an electric mixer (yeah, I just kinda throw them all in at once)
2. Put cupcake liners into a muffin tin; scoop batter into liners until they are about 2/3 full
3. Bake for 18-22 minutes, or until you can stick a toothpick into them and it comes out clean
4. Let them cool for about 10 minutes before adding the frosting

For Frosting
1. Mix butter, cream cheese, and vanilla with an electric mixer for about 3-5 minutes. It has to be really well combined
2. Sift in the powdered sugar about one cup at a time, mixing between each cup
3. Frost cupcakes!
